The ingredients 🍽
- 2 tomatoes
- 1 green zucchini
- 1 yellow zucchini
- 1 eggplant
- 1 red onion
- 2 cloves garlic
- 30 g of olive oil
- 50 g of parmesan
- 2 sprigs of thyme
- 1 sprig of rosemary
- 1 teaspoon of Provence herbs
The steps of the recipe 🔢
Step 1: After washing them, cut all the vegetables into half-centimeter slices and set them aside.
Step 2: In a baking dish, mix 2 tablespoons of olive oil with the crushed garlic cloves.
Step 3: You can now place the vegetable slices in the dish by interspersing them: Yellow zucchini / Eggplant / Red onion / Green zucchini / Tomato (and so on).
Be careful to hold your vegetables tightly, because they will reduce a little during cooking.
Step 4: When all your vegetables are ready, brush them with a little olive oil and sprinkle with fresh thyme, rosemary and Provence herbs.
Step 5: Salt and pepper before baking for 50 minutes at 180°C.
Step 6: Remove from the oven, add a nice handful of parmesan. All you have to do is enjoy!
