The ingredients 🍽
For garnish :
- 500 g “cherry” tomatoes
- 80 g of fresh goat’s cheese
- 10g olive oil
- Salt, pepper, Provençal herbs and thyme
For the crumble dough:
- 70 g flour of your choice
- 40 g of parmesan
- 50 g butter (soft or softened)
- 2 teaspoons of Provence herbs
The steps of the recipe 🔢
Step 1: In a baking dish, mix the cherry tomatoes with olive oil, salt, pepper and Provence herbs.
Step 2: Put everything in the oven for 20 minutes at 180°C.
Step 3: Meanwhile, prepare your “express” crumble dough: mix the softened butter, flour, parmesan and herbs de provence by hand until you obtain a sandy and crumbly dough.
Step 4: When the tomatoes are cooked, remove the thyme sprigs and add the fresh goat cheese. Mix well and cover with crumble dough.
Step 5: Return your dish to the oven for 25 minutes at 180°C.

Tip: For your crumble dough, you can use whatever flour you want. This works very well with gluten-free flours like oat or buckwheat flour. ✨
